tasty tuesday: peanut butter noodles

and this week is already off to a crazy start… read: it’s 2am and after working through a never ending inbox, i am wired. so why not post about tonight’s dinner, right? right! i had to come up with something easy and quick so i defaulted to one of my go-to’s. these peanut butter noodles are super easy to prepare and quite yummy!

ingredients:

– 1/2 cup chicken broth
– 1 1/2 tablespoons minced fresh ginger root
– 3 tablespoons soy sauce
– 3 tablespoons peanut butter
– 1 1/2 tablespoons honey
– 2 teaspoons hot chile paste (optional)
– 3 cloves garlic, minced
– 8 ounces rice noodles

how to prepare:

– bring a large pot of water to a boil. add noodles and cook until tender according to package directions. drain.

– meanwhile, combine chicken broth, ginger, soy sauce, peanut butter, honey, chili paste, and garlic in a small saucepan.  cook over medium heat until peanut butter melts and is heated through.  add noodles, and toss to coat.

** i sauteed some chicken with onions, peppers, and broccoli and added it to the mix for more substance **
