pretty in pastels!

even though spring is already officially here, it certainly doesn’t feel that way in seattle – it’s been rainy and cold – as usual. BUT the weather looks promising for this weekend [well, for seattle standards] and the temps could climb over 60F. with that said, i’ve been thinking about a possible easter outfit for church [preferrably a dress] and have been drawn to pastels… we shall see what i come up with on sunday [since it will be dependent on our crazy weather]!

tasty tuesday: stuffed jalapeños

i finally got around to trying out one of the green appetizers and it turned out just as yummy as i thought it would :) the best part is that it really wasn’t that hard to make! since i don’t have a grill in my apartment, i baked them in the oven and it worked out just fine.

ingredients:

for stuffed jalapeños:
– 3 slices of bacon
– 6 ounces whipped cream cheese
– 1/2 cup shredded pepper jack cheese
– 2 scallions, finely chopped
– juice of 1 lime
– 2 cloves garlic, finely chopped
– salt, to taste
– 12-15 medium-sized jalapeños, halved lengthwise, seeds and veins removed

for cilantro sauce:
– 1 bunch cilantro, rinsed clean
– 1/2 cup sour cream
– juice of 2 to 3 limes
– salt, to taste

how to prepare:

** preheat the grill to medium-high heat (in my case, the oven to 400F)

– cook the bacon in a skillet or oven until crispy. let it cool and crumble using a knife or your hands
– mix the bacon, cream cheese, jack cheese, scallions, lime juice, garlic, and salt in a large bowl
– divide the cheese and bacon mixture between each of jalapeño halves, filling each completely
make the cilantro sauce: cut the majority of the stem off the cilantro. (some stem is fine and will enhance the flavor.) place the rest of the bundle in a small food processor with the sour cream, lime juice and salt until well combined. set aside
– place the pepper on a lightly oiled grill (a grill pan or grill stone will work, too). cover and grill the peppers 7-9 minutes until the bottom has browned and the cheese has melted
– if desired, use a small kitchen torch to lightly brown the top of the jalapeños. arrange the jalapeños on a platter with the cilantro sauce

is it just me or it felt like it took for-ever for this week to come to an end?! i am so glad it’s finally friday AND that i don’t have a ton of plans for this weekend [seems like i’ve been in need of chill weekends lately]. i’m looking forward to a few dinner/coffee/brunch dates to catch up with girlfriends that i’ve been meaning to get togetherwith for a while. oh, and of course, enjoying some down time in between. have a fabulous weekend!

when in rome…

i think  one of the best ways to spend money is travelling, which is why i try to venture out whenever possible. a couple of weeks ago, i posted about my adventures in europe last fall [here] and couldn’t leave out rome, where we started off. before going to italy, all i could think of was being able to sit outside and enjoy amazing food and fantastic wine. our trip was exactly that and i would do it all over again!

ever catch yourself in situations where you feel like no matter what you do, it’s never enough?! welcome to my world! one of a perfectionist [read over the top type A personality], who is constantly overanalyzing every situation, trying to be her best, not wanting to let any flaws show… only to realize that this is not the way life should be lived AND that it becomes an unhealthy cycle. things have been a little crazy lately [in a good way] and this is just a small glimpse of what i’m walking through… as well as what i’m learning.

organize away [necklaces]

a couple of weeks ago i posted [here] about how i was hoping my dad would help me get my anthropologie knobs up on the wall so that i could finally get my necklackes organized. all of a sudden it feels like i have lots of new jewelry – all because i’m able to actually see the necklaces hanging as opposed to having them tucked away :)
